Beef Kabobs with Yogurt and Spices

Try this beef Kabobs with yogurt and spices. You would love it...





 What we need
  1. 1\2 c low fat plain yogurt
  2. 1tbsp soy sauce
  3. 1tbsp lemon juice
  4. 1tbsp ginger
  5. 1tsp ground cumin
  6. 1\4 tsp ground black peppers
  7. 11\2Ib boneless beef sirloin ,fat trimmed cut into squares
  8.  1tsp of powder onions
  9. 2 sm red and green bell peppers cut into squares 

Directions

1 In a large bowl combine the yogurt soy sauce lemon juice ginger cumin and  black peppers  and the beef tossing to coat. Cover and refrigerate for 6 to 8 hours

2 Coat a grill rack with cooking spray  preheat the grill thread the beef onto skewers alternating with the bell peers. (can be done in the oven too for about).

3 Place the skewers on the grill rack and cook turning to brown all sides until meat is no longer pink and a meat thermometers registers 145 f for medium rare 12 to 15minutes

Sambusa Enjoy

Sambusa are a pastry that is filled with flavors enjoyed across Africa, the Middle East and South Asia. Sambusa are served as appetizers and snacks at home and at celebrations. Sambusa are extra special during Ramadan. I don't know why but i love it.

  • Ingredient
  • 1 (14 ounce) package spring roll wrappers
  • 2 tablespoons olive oil
  • 2 pounds ground Beef
  • 1 leek, chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons ground cardamom
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 small Onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 tablespoon water, or as needed
  • 1 quart oil for frying 
 
  • Directions
  1. Heat olive oil in a large skillet over medium heat. Add onions, leek and garlic, and cook, stirring until the onions are transparent. Add ground Beef, and cook until about halfway done. Season with cumin, cardamom, salt and pepper. Mix well, and continue cooking until Beef has browned.
  2. In a small dish or cup, mix together the flour and water to make a thin paste. Using one wrapper at a time, fold into the shape of a cone. Fill the cone with the meat mixture, close the top, and seal with the paste. Repeat until wraps or filling are used up.
  3. Heat the oil to 365 degrees F (170 degrees C) in a deep-fryer or deep heavy pot. There should be enough oil to submerge the wraps. Fry the Sambusa a few at a time until golden brown. Remove carefully to drain on paper towels.

A friend of mine gave me this recipe of how to make a cheese cake so enjoy it my friends.


Cheese Cake

The list:

1. One large Philadelphia
2. A large double Cream
3. 2 eggs( my sister gets an upset tummy when added eggs, so eggs are not absolutely must)
4. Jelly, any flavor
5. Sugar
6. Digestive biscuit, a large one
7. Butter

Instructions in how to make it:

• Get a big bowl and put the Philadelphia, the Cream and the Sugar in the bowl. Mix until all the lumps is gone.
• Put two YOLKS, in the bowl with the cream, Philadelphia and sugar and mix.
• Put the egg white in another bowl and beat it until it becomes fluffy.
• Add it to the others and mix it.
• Put water in a small pot, for the jelly and put it on the fire, add the jelly. DO NOT put too much water in the pot; we don’t want the cheese cake to be watery.
• Once the jelly cools down add it to the others and mix it.
• Make the digestive biscuit in to crams, then add butter and mix it with your hands.
• Put the digestive biscuit crams in a big flat bowl, as a base.
• Put the cheese mix on top of that.
• Put in the fridge for few hours.
• Once set add more digestive biscuit which we also mixed butter with on top of the set cheese cake. Enjoy It!

LOOK

Looking at what the Somali diet is I never realized that we eat a lot o Carbohydrates and cook it too. What is Carbohydrate Carbohydrates are found in grains, dairy products, fruits, vegetables. They're also found in sugar and sweets. For most people, carbohydrates serve as a primary source of energy. What I’m trying to say is that we need to eat less Carbohydrate. I wonder why my diets did not work because I’m eating of Carbohydrates but we need to have a balance of everything

Chicken Fajita


To all the Somali parents that is sick of cooking bariis and pasta try making Chicken Fajita. It is easy and simple and only takes 20mins to prepare it. You can buy Fajita kits at the store, and it contains 12 flour tortillas, Fajita seasoning mix and Salsa pouch.


 Preparing the Fajita you will need:
  1. Slice  1onion 1 green red yellow peppers  add 1lb of boneless chicken
  2. or Steak into thin strips
  3. in a large  skillet heat 1tbsp or 15ml oil over medium heat
  4. Add chicken or the steak cook until no longer pink  for about 10mins
  5. add  onions  green red  and yellow peppers  cook until it is tender for about 3mins
  6. add seasoning mix and 1\4 cup  (50ml) water simmer under covered for about 2mins
  7. Until  thickened , stirring often

Warming Tortillas:
1.   Remove tortillas from all packing
2.   Place stack on microwave-safe plate
3.   Cover with microwaveable plastic wrap
4.   Microwave on high for 1 minute or until warm

Unconventional Oven:
  1. preheat oven to 350 degrees (180 D)
  2. remove tortilla from all packing
  3. wrap stack of tortillas in aluminum foil
  4. bake on middle oven rack for 10 minutes or until warm

Fill and serve:
1.                  spoon fajita filling into each tortilla
2.                  shake salsa pouch
3.                  top with salsa and desired topping
4.                  roll-up to serve

Anjeero

The Somali people eat anjeero for breakfast (quraac).The anjeero can be eaten in so many different ways. Some people eat with sugar+tea+ghee or others simpley eat with meat sauces such as  liver goat meat and so on..Some make  your own way of eating this and have fun..This is how you make it.

                                                                      Anjeero
This is what you will need to make the Anjeero...

Anjerro
 3 cups or self raising flour or "bur anjerro"
2 cups of warm water
1/2 tsp. salt

1. Mix all the ingredients with a food processor until there are no longer any lumps.
2. Let sit for 15 minutes.
3. Preheat a pan on high heat. Pan should not be really hot. I put it on medium
4. Lightly grease the pan to prevent the anjerro from sticking.
5. Using a serving spoon, scoop 1/4 cup of batter into the center of the pan.
6. Spread the batter by using a circular motion.
7. The anjerro is ready when the underside is lightly browned and the top is bubbly.
8. Remove the anjerro with a spatula and place on a plate.
9. The process is repeated until all the batter has been used.


Like I said anjerro can be eaten in so many ways. You can eat it with ghee + tea +sugar, honey and olive oil, with milk and tea, or with meat sauce

Bariis












Bariis (Somali Rice)

4 cups basmati rice (depends on how many people you are serving to).
rinsed and drained
2 Tbsp. oil
2 chicken cubes or it is called  maggi
3 cups chicken stock
2 cinnamon sticks
5 cardamom pods
5 cloves
5onions
4 garlic

1. Heat oil in a pot; add the chicken cubes and stir to dissolve.
2. Add the rice and stir-fry for 1 minute to coat the rice with the oil.
3. Add the chicken stock and bring to a boil.
4. Reduce heat to very low and cover.
5. Cook for 15 - 20 minutes or until the rice is tender. In the oven ..


Suqar, and Green Onions

1/2 lbs beef; cut into really small cubes
1 Tbsp. oil
1 Tbsp. Hoisin sauce
1/2 chicken cube
1/2 cup water
1 tsp. garlic; minced

1. Heat the oil in a small pot; add the beef and brown for 2 minutes.
2. Add the garlic and chicken cube and stirfry for 2 minutes.
3. Add the water and cover.
4. When most of the liquid disappears, add the hoisin sauce.
5. Cook for 5 minutes on low.
6. Serve over rice with green onions.
7. Don’t for the banana.

Cooking

The art to cooking is having fun playing with the ingredient. The  is secret never be shy to try something new or different with your recipes take risks with it ,and you will see at the  end what kind of art you created,and then you will be proud of your self. try it never hurt to do so.

Baby Food

My little princess wants to jump me for my lunch dinner or whatever I’ am eating she wants’ it and tries to grab it from my hands it is so cute and funny. But many experts say that this is a sign that your baby is ready for solid food so I will share some of my recipes to making a health baby food insha Allah. So we can stop feeding our baby’s jars or pre packed   food. The best way is to make your baby’s food at home first you know what you are putting in and the entire ingredients are fresh.

You will need:

  1. A large pot
  2. vegetables’ such as  potato, sweet potato, butternut squash, parsnip, carrot, broccoli or cauliflower
  3. Chicken Breast
  4. Chicken Stock
  5. salt
  6. Olive Oil
  7. Pasta
  8. Peas

  Wash All the Vegetables and the chicken
  Combine All your ingredients into the pot (make sure you cut all your vegetables and chicken breast into small and the  pasta also.
 Add water chicken stock a pinch of salt and 1tsp  olive oil .
Cook it for about 1 hour or until everything is tender

Blend in a food processor until it becomes smooth  

Fridge
• Cover, cool and refrigerate cooked meat immediately.
• Keep no more than 2 days in small, airtight containers

low fat Lime Cheese Cake


For those who love cheesecake this one is for you. And for anyone who is on a diet this is only about 200 Cal.

Crust

1 1\4 c graham crackers crumbs
1\4 c (brown sugar)
3Tbs butter, melted

Filling

1 IB regular cream cheese

1 IB fat free cream cheese

1/1/4 c brown sugar

1/1/2 TBS lime juice

Pinch of Salt

4   lg eggs


Preheat the oven to 350 f

To make the crust
Mix the crumbs, splenda,  butter and press into a 10 springform pan.

To make the filling

Beat the cream cheese and splenda until well mixed and smooth
Add   the lime juice and salt and beat until smooth   add the eggs one at a time beating well after each addition.


Pour the filling over the crust and bake 0 to 60 minutes or until slightly firm to the touch. Cool 15 to 20 minutes before placing in the refrigerator to chill for 4 to 6 hours before serving

Somali Cake

You will need
 6 eggs
1 1/4 cups sugar
1/2 cup Oil
1 1/2 cups flour
1 tsp. baking powder
1 tsp. cardamom powder
1/2 cup milk
1tsp Vanilla Extract

1. Mix the eggs, sugar, and Oil  in a bowl.
2. Mix in the flour, baking powder, Vanilla Extract and cardamom.
3. Add the milk and mix until smooth.
4. Pour the mixture into a greased pan.
5. Bake in a preheated oven ( 350 F) 40 min.

Love Somali Food

I remember as a child my hooya cooking  bariis. I can smell the spices such  as  cumin (kamuun), cardamom (heyl), cloves (qaranfuul) and sage. the house would fill with these smells.. damm  i miss those days.

Welcome

Welcome everyone I will tell you a little about Somali Cuisine. Somali meals are mostly meat vegetarianism is very rare. Goat, beef, lamb chicken is fried in ghee, or grilled or broiled. It is spiced with turmeric, coriander, cumin and curry and eaten with basmati rice for lunch, dinner and sometimes breakfast. Also Pasta is something rare.

Breakfast (quraac) is an important meal for Somalis people often start the day with some style of tea (shaah). The main dish is typically pancake-like bread (canjeero). This is made 2 cups of self raising flour or “bur meaning flour.
2 2/3 cups of warm water
1/2 tsp. salt  then mix it .
